Pumpkin Tarkari

Ready to Serve

1) 4 lbs of riped pumpkin
2) 1 tbs Cumin Seeds
3) 1 tbs of Ghee or Butter
4) 4 dried red chillies
5) Coriander Powder

6) 1 cup of Green Peas
7) Cilantro for garnish
8) 1/2 tbs spoon of Mustard Seeds
9) 2 teaspoon of Ginger Paste
10) 1/2 tbs of chopped ginger
11) 1/2 tbs of Paprika
12) 1 Tbs of Sugar
13) Salt & Pepper for Seasoning
14) 1/2 Cup of Water

Directions.
Cut the Pumpkin in small cubes. In a pan heat some ghee and put in the mustard and cumin seeds. After the cumin seeds turn dark put in the red chillies and chopped ginger. Sautee for few mins and then add the peas. Put some salt, pepper, coriander powder, ginger paste, and paprika and cook for 5 mins. Then add the pumpkin. Sprinkle 1 tbs of sugar and 1/2 cup of water and cook slowly in medium heat until the pumpkin is soft. Slowly mash the pumpkin in the pan. Garnish with Cilantro and serve it with rice or Naan.
