This is definitely one of my favorite. An easy dish to make with lots of amazing flavors tingling your palate. This is my version of Shrimp Scampi.
1) 1 lbs Shrimp (tail on raw)
2) 1 whole red pepper julienne
3) 1 bunch of Asparagus
4) 4 Cloves of garlic finely chopped
5) 1/2 bunch chopped fresh basil
6) 1 Jalapeno julienne
7) 1 tea spoon of garlic oil or olive oil
8) 1 table spoon of butter
9) 1 box of Angel Hair pasta
10)1/2 Lemon Juice & Zest
11)Salt & Pepper for taste
In a hot pan add 1/2 tea spoon of garlic oil or olive oil. Once hot add red peppers. Cook for about a minute and then add the asparagus. Season the ingredients with Salt &Pepper and cook until the asparagus are almost cooked. Take it out of the pan and rest it aside.
Add 1 table spoon of butter with 1/2 tea spoon of garlic oil or olive oil. Remember to add the oil first then the butter. If butter is heated too much it will start to burn. Add garlic cloves and Jalapeno slices. Cook for about a minute. Don't let the garlic burn so i suggest cooking in medium heat.
Now add the tail on shrimp. You have to be very careful not to over cook the shrimp. About 3-4 minutes is more than enough. If needed you can also cook a little more.
Then add the peppers and asparagus. Add the basil leaves and fresh lemon juice and zest. Season with salt and pepper.
For the pasta. Bring water to boil and add 1 table spoon of salt. Also add some olive oil to the water. This will prevent the pasta to stick with each other. Cook the pasta for no more than 4 minutes. Use a strainer to drain the water. Once you have the pasta flavor it with salt and pepper.
You can assemble it two way. One way is to make a base out of shrimp and other ingredients put pasta on top or the other way around. Just make sure you take some juice out of pan and pour it on top of the pasta when serving also i recommend sprinkling just a little olive oil on top.
