What's one thing that comes to your mind when you hear the word 'Thai Food'? Well this answer will definitely defer from person to person. But the word that comes to my mind is Thai Fried Rice. In restaurants you will see a variation of Thai Fried rice and I have to say that although I haven't been lucky enough to taste one in Thailand, I am trying to replicate this dish with my twist. Here is my variation of Thai Fried Rice (Chilly Basil Fried Rice Chicken) and I am serving it with a side of Avocado Salsa (the recipe for Avocado Salsa is the same as the one with Katti Rolls) just to tone down the heat of the dish.
Ingredients: 1) 1 whole red onions julienne
2) 1 bunch Basil Leaves Chopped
3) 3 Thai Hot chilies julienne
4) 3 garlic cloves chopped
5) 2 Red peppers julienne
6) 2 table spoon of garlic oil (optional)
7) 2 table spoon of Oyster Sauce
8) 2 tablespoon of Fish sauce
9) 2 Cups of cooked Thai Jasmine Rice
10) 2 lbs of boneless chicken thigh
11) 1 tea spoon sugar
12) 2 eggs
Directions:
In a hot pan pour some garlic oil or vegetable oil, fry you garlic and red chilies for about a minute. Keep on stirring otherwise your garlic will be get too burnt.
In the pan add the chicken and cook for about 5 minutes.
When the chicken is half cooked, add 1 table spoon of oyster and fish sauce and stir. Then add tea spoon of sugar and half the bunch of basil leaves. This will infuse all the goodness of basil in the chicken. Cook for about 10 minutes.
As the chicken cooks, the bottom layer turns golden brown and all the water evaporates. At this point add the rice and stir properly.
Put it aside to rest for about 5 minutes. In mean while lets start the preparation for the the other half of the dish.
In a hot pan, heat half of a tea spoon of garlic or vegetable oil and stir fry the vegetables. As you can see instead of cooking everything together I am cooking everything separately. This ensures that flavor has been added to every single aspect of the dish.
After about 3 minutes, make space in the middle of the pan to add the eggs. This step ensures that the egg is properly cooked before you mix it with the vegetables. After you have mixed the eggs with the vegetables, 1 tablespoon of fish sauce and oyster sauce.
Add the chicken and rice mixture. Then add the basil leaves and stir thoroughly.
Take the pan off the heat and let it rest for about 2-3 minutes in the pan. Your Chili Basil Fried rice is ready to be served :)
