Anda (Egg) Curry

My sincere apologies for my tardiness. A lot happened in my life and I was very busy. Happy to announce that I will be updating the blog more frequently. Today I have a very special dish for you, as this recipe belongs to my fiancĂ©. It's very delicious and simple to prepare.


  • 4-5 Hard Boiled Eggs
  • 1 red onion finely chopped
  • 1 spring onion finely chopped
  • 3 plum tomatoes sliced
  • Cilantro finely chopped
  • 2-3 potatoes half boiled and diced
  • 1 table spoon of ginger garlic paste
  • 1/2 tea spoon of Cumin and Fenugreek seeds
  • 1/2 table spoon of Cumin and Coriander powder
  • 1/2 table spoon of turmeric powder
  • 1 table spoon of red chilly powder
  • 2 Bay leaves 
  • Salt & Pepper - Taste
  • 1 cup of water 

Hard boil the eggs and let it sit in ice cold water for about 3-4 mins. Ice cold water hardens the egg and also makes it a lot easier to peel. Once you have peeled the egg, cut the egg in half, length wise. To ensure the yolk stays in, use a very sharp knife or a string. In a pan heat some oil and fry the eggs yolk side down and then turn the egg. Season it with little salt and pepper.

In a pan heat some oil. Once the oil is hot add some Fenugreek & Cumin seeds. Then add onion and a little bit of salt. Once the onion turns brown add your ginger and garlic paste. 

At this point add your tomatoes and cook for about 2-3 mins. Then add turmeric powder and 1/2 tbs of red chilly powder.

Once the tomatoes have reached the above consistency, about 5 mins, add your spring onions. Cook it for about 1 min. 

Then add your half boiled-diced potatoes. At this point add your dry spices (coriander and cumin powder) and bay leaves. Also add Salt & Pepper for taste. 

Add a cup of hot water to the pan. Always use hot water when cooking. 

After adding water, stir thoroughly. Close the lid and cook it for about 4-5 mins. 

Add the eggs and let it sit in very low heat for another 4-5 minutes. 

Garnish with cilantro and your egg curry is ready to be served. Enjoy :)
