Chicken Tacos Recipe

I love making tacos. It's easy to make and it's delicious. The secret for this taco is the toppings and the marinade that I use for the chicken. So give it a try and let me know what you think? Ingredients:

  • 2 lbs boneless Chicken Thighs
  • 1 red bell pepper julienne
  • 1 plum tomatoes julienne
  •  1/2 red onion julienne
  • 1/2 bunch of Cilantro
  • 3-4 garlic smashed
  • 1/2 ginger finely chopped
  • 2 avocados 
  • 1/2 lime juice (fresh) & Zest
  • 2 dried red chilly crushed
  • 2 Tortillas (depends on how many you are serving) 
  • 1 tbs of roasted cumin powder
  • 2 tbs of Soy Sauce
  • 1 tbs of fish sauce 
  • 1 tbs of balsamic vinegar 
  • 1/2 tbs of brown sugar 
  • Oil 
  • Salt & Pepper (taste) 

Directions: 


To marinade the meat, chop your chicken into long strips. Add 1 tbs of oil, roasted cumin powder, soy sauce, fish sauce & brown sugar. Let it sit for at least 30 mins.


Now for the Pico (Tomato Salsa). In a pan heat some oil. Add your ginger, garlic and crushed dried red chilly. Cook for about a minute until the ingredients turn brown. 


Add the onions. At this point add some salt & pepper and cook it for no more than 2 minutes on medium heat. 


Now add you bell pepper and tomatoes. Stir fry it for about 3- 4 minutes and add 1 tbs of balsamic vinegar. Make sure you don't over cook it. You want a little firm texture that you can bite into. 


In a food processor, add the cooked ingredients together with Cilantro and pulse it couple of times. Again don't make it too mushy. 


You should get the above consistency with your Pico. 


Once the chicken has been marinaded for about half hour cook it until you get a nice crisp brown color. Make sure your pan is on medium - medium high heat to get a good caramelization. 


Don't try to over do you Avocado. Just crush them slightly with a fork and add little salt, pepper, lime juice & zest and a few cilantro leaves. 


Time for Assembly! So take the tortillas and layer it with chicken, pico and avacado. You can also add sour cream.
