Grilled Chicken with Quinoa Salad

A good friend of mine suggested to make this dish. A lot of people these days want to eat and stay healthy so I bring to you a very simple, healthy and delicious dish that everyone can enjoy. I will also be serving the dish a side of power packed fruit smoothie.

Ingredients for Grilled Chicken and Quinoa

  • 1 and half cup of red quinoa and 2 and half cup of water
  • half red onions chopped
  • 3-4 garlic cloves finely chopped
  • half red bell pepper chopped
  • 1 avocado chopped 
  • 1 celery stick chopped 
  • 1 tomato finely chopped 
  • 1/2 Lime juice 
  • 4 chicken tenders 
  • 1 and half tablespoon of non fat greek yogurt
  • 1 table spoon of soy sauce and worcestershire sauce
  • 1/2 tbs of cumin powder
  • 1/2 tea spoon of turmeric powder 
  • 1/2 tea spoon of red chili flakes or powder 
  • Couple of stings of fresh rosemary 
  • Olive oil, Salt & Pepper (taste) 

Ingredients for Fruit Smoothie 

  • 2 bananas 
  • Kale 
  • 1/2 cup of orange juice 
  • 1/2 cup of non fat greek yogurt 
  • 5 strawberries
  • 5-6 cubes of ice

Directions for the Fruit Smoothie

  
In a blender add your smoothie ingredients. Add ice if you desire. 


There you have it a simple yet delicious low fat packed with energy smoothie. 

Directions for the Grilled Chicken with Quinoa Salad 


In a bowl marinade the chicken in greek yogurt, soy and worcestershire sacue. Add cumin and turmeric powder and red chili flakes. Let it marinade for about 15 minuted.


In a deep sauce pan add some Extra Virgin Olive oil. Saute the garlic, onions and red bell peppers for about 5 minutes in medium heat.


Add the Quinoa, stir and cook for about 1-2 minutes. Then add your chopped tomatoes and water. Turn the heat to low and cover the sauce pan. Let it shimmer and cook for about 15-18 minutes on low heat. After the Quinoa is cooked let it rest for about 10-15 minutes. Then add your avocado, celery and lime juice. Add salt & pepper for taste.


In a hot pan add some olive oil. Once the oil is heated place your chicken tenders as shown above. Add two strings of rosemary. Make sure not to flip the chicken too much. Once a side is done then flip it to cook the other side. If you try to turn the chicken too much then it looses all the juice and can become dry.
